Snickerdoodles

I do not use gluten free mixes very often, but I found this recipe made with Bisquick Gluten Free mix tucked away in a folder of recipes. I had marked it “very good” and I decided to try it again.  I was very pleased with the results.  I think with the cinnamon, it will make a good addition for gluten free Christmas cookies.

As always, if you must eat GF for CD, check all ingredients.

Snickerdoodles

2 eggs

1 1/4 cups of sugar –  divided

1/4 cup of softened butter

1/4 cup of shortening like Crisco

2 cups of Bisquick Gluten Free mix

2 teaspoons of ground cinnamon

 

Heat oven to 375 degrees

In a large bowl mix eggs, 1 cup of sugar, butter and shortening

Stir in Bisquick and mix until dough forms

In a small bowl mix 1/4 cup of sugar and cinnamon

Shape dough into 1 1/4 inch balls – should make 2 1/2 dozen

Roll in the sugar mix and place 2 inches apart on cookie sheet

Bake 10 – 12 minutes until set

    It looks good; I’ve always loved snickerdoodles–good childhood memories. I’m making a meal for a couple who’ve had some illness and the meal must be dairy and gluten free. I ended up buying some pricey, locally made cupcakes from Whole Foods. The young woman who works there said they were fantastic and the couple for whom I’m cooking have two teenagers. That said, I’ll copy this recipe for future use! Thanks!

    • Check out the GF part of my blog. I tried to put up a variety of easy “normal” meals. When I first went GF many, many years ago, there was about one cookbook and it was awful. I was very hungry for awhile until I figured it out. Thankfully, now there is a useful internet.

        I wish I’d thought of that, though I came up with a good meal for them. It’s really the baking part that I’m flummoxed about, it’s tricky. But yes, going forward, yours will be my first reference. Thanks for this good and yummy information!

      • I have mostly given up on baking. GF is usually not very good and I was never a big bread or cake eater, so it worked out for me.

    😋 love snicker doodles! I like you don’t usually buy premixed,l did how ever buy a chocolate cake mix for Thanksgiving for a special surprise for daughter in law . I then put a white mountain icing on top,It was a enjoyed by all.
