Onion Cassarole

If you like onions, you will love this simple recipe.  It is real food that is naturally Gluten Free.

2 bags of boil-in-a-bag white rice

2 very large sweet onions (about 3 to 4 cups) such as Texas 1015’s or Vidalia

2 tablespoons of butter or margarine

1 cup of shredded Swiss cheese

2/3 cup of half & half

preheat oven to 350 degrees

1. Cook rice according to directions

2. Chop onions to bite-size

3. In a large skillet melt butter and cook onions until limp

4. In a 2-quart casserole dish, coated with cooking spray,  combine all the ingredients.

5. Bake uncovered at 350 degrees for an hour.

This dish is often requested at our extended family gatherings.  Boil-in-a-bag rice is quick and easy, but any firm rice can be used.
