An Appetizer – Goat Cheese Truffles



These are delicious little cheese balls that are good to pop into your mouth or serve on a Gluten Free cracker.  This is a recipe that is naturally Gluten Free and the ingredients are easily found at the market. But as always, if you have to be GF check all ingredients.

1 (8 ounce) package of softened cream cheese

1 (6 ounce) log of mild goat cheese

1 teaspoon of fresh lemon juice


1 tablespoon of  fresh minced chives

1 tablespoon of  fresh minced basil

Dried herbs can be used.  Check for equivalent measurements .

1 to 2 teaspoons of minced roasted garlic

1/2 teaspoon of cracked black pepper


1 cup of finely chopped toasted pecans

Beat first 3 ingredients at medium speed with an electric mixer until smooth.  Stir in herbs and pepper.  Cover and chill for 2 hours or until firm.

Shape cheese into 24- 1 1/2 inch balls and roll in pecans.  Chill for for at least an hour.

I like to make the balls into a smaller bite-size and serve them with “Blue Diamond Nut-Thins”, crackers that have always been GF.  This is an easy appetizer to take to gatherings.
