More Christmas Candy – Peppermint Bark



This is a very festive Christmas treat.  Definitely a favorite tradition at our home.  If you have to be Gluten Free, be sure to check the ingredients.

Baking sheet lined with parchment or foil

1 – 20 oz package of almond bark

1/2 teaspoon peppermint extract

candy canes – about 10 small ones crushed  This needs to be adjusted to the cane size and your taste.  I have also seen peppermint candies already crushed.

*Almond bark needs to be melted.  Most packages have directions on the back.  It can be microwaved for 60 seconds, stirred, then microwaved at 15 second intervals and stirred until melted.  It can also be melted in a double boiler.  (a small pan in a large pan of boiling water).

*Stir in peppermint extract

*Add crushed peppermint candies

*Pour on baking sheet in a thin layer.  Refrigerate until firm.  Break into pieces and store in an airtight container in the refrigerator.

**Chocolate can also be drizzled over the bark.  Melt 3 ounces of chocolate chips and add 3/4 teaspoon of vegetable oil which will make it stick.  Pour into a small zip baggie with a hole cut into a corner and drizzle chocolate over the bark.
