Christmas Candy – Dark Chocolate TrufflesPosted: December 15, 2012
To make up for the lack of gluten Free cookies for Christmas, I have added homemade candies to our tradition. It is easy for find naturally Gluten Free recipes for candy and here is one that everyone loves.
DARK CHOCOLATE TRUFFLES
1/3 cup of heavy whipping cream
6 tablespoons of unsalted butter, cut into small pieces
2 cups of 60% cacao bittersweet chocolate chips .
1/3 cup unsweetened cocoa
*In a small saucepan bring the cream to a simmer. Add the butter and stir until melted. Add the chocolate chips. Stir until completely melted and smooth.
*Remove from the heat and pour into a shallow bowl.
*Cool, cover and refrigerate the mixture until firm, at least 2 hours.
*Using a melon baller or small spoon, roll the mixture into 1-inch balls. Roll each ball in the cocoa.
*Enjoy immediately or refrigerate in an airtight container for up to 2 weeks.
Truffles can also be rolled in chopped almonds, pecans, coconut or jimmie sprinkles instead of cocoa. I like to make them small enough to pop the whole truffle in my mouth!
