Cookies for Afternoon Christmas Tea – Amaretti Cookies


These are wonderful with afternoon tea, coffee or hot chocolate.  And of course, good for anytime of the day.  The cookies happen to be Gluten Free and ingredients are easily found at your local market.

1 pound silvered almonds

2 cups powdered sugar

2 teaspoons vanilla extract

1/2 teaspoon almond extract

2 egg whites

*Preheat oven to 350 degrees

*Process almonds in 2 batches in a food processors until finely ground.

*Combine ground almonds, powdered sugar, vanilla and almond extracts in a medium bowl, using hands to mix. Stir in egg whites (dough will be sticky).

*Drop by teaspoonfuls on lightly greased baking sheets. I like to use parchment paper.

*Bake for 15 to 20 minutes or until lightly brown. Cool on racks.
