Over the years I have been able to find some cookie recipes that just happen to be Gluten Free. Christmas can be difficult when everyone else is eating sweets, but I have managed to find cookies and candy that everyone will enjoy and do not require searching for special flours and ingredients. I hope you will find something for your sweet tooth. As always, if you have to be GF, recheck every ingredient.
CHOCOLATE MERINGUE DROPS
2 egg whites, at room temperature
1/4 teaspoon of tartar
1/8 teaspoon salt
2 tablespoons cocoa
3/4 teaspoon almond extract
2 tablespoons semisweet- chocolate mini-pieces
Preheat oven to 200 degrees. Line 2 large cookie sheets with foil or parchment paper. In a small bowl with a mixer at high speed, beat egg whites, cream of tartar and salt until soft peaks form.
Beating at high speed, gradually beat in sugar. Add cocoa and almond extract and continue beating until meringue stands in stiff, glossy peaks.
Drop mixture by level tablespoonfuls onto the cookie sheets. Sprinkle some chocolate pieces on top of each cookie.
Bake 1 hour and 15 minutes or until set. Cool the cookie sheets on wire racks for 10 minutes. Remove cookies from sheets and cool them completely on the wire racks. Store in tightly covered containers. Makes about 3 dozen.
The best news about these cookies is that they are 20 calories per cookie!
