Great Grilled Chicken – Spicy Vinegar Marinaded Chicken

Spicy Vinegar Marinaded Chicken

This is totally Gluten Free and has been a family favorite for years.  As always, check your ingredients if you need to be GF.  Also, I ALWAYS SKIN MY CHICKEN FIRST to reduce the fat.

2 cups cider vinegar

1/4 cup firmly packed dark brown sugar

1/4 cup vegetable oil

3 tablespoons of dried crushed red pepper

4 teaspoons of salt

2 teaspoons of pepper

2 (21/2 to 3 pound) cut up whole chicken   I prefer to use just bone-in chicken breast, thighs & legs.  This recipe can be cut in half for a smaller family, but think left-overs! Add to a salad, make a sandwich, GF lettuce wrap, or spicy chicken salad.

Stir together first 6 ingredients until blended.
Divide chicken and marinade between 2 zip lock bags. I use a Tupperware marinading container and put everything in it.

Chill 2 to 8 hours turning occasionally.

Remove chicken from bags and throw out marinade.

Grill at medium-high with lid closed for 40 minutes or until done.  Check temperature with a thermometer.

Serve with roasted potatoes and as long as the oven is on, roast some asparagus too.   I like to make this for company, as all you need to do is grill the chicken and the prep and clean-up is already done.  For an outdoor picnic, use cold sides such as Chilled Vegetable Salad (on previous post)  and potato salad which is all made ahead of time.
