CHICKEN BBQ FOR THE SLOW-COOKER
This is easy and delicious chicken. I cook it until it falls off the bone. It can be eaten the next day as sandwich on a GF bun with coleslaw or your choice of crunchy vegetable topping.
2 teaspoons of salt
1 1/2 teaspoons of paprika
1/2 teaspoon of garlic powder
1/2 teaspoons of pepper
1 (3-3 1/2 lb) cut-up whole chicken I just get bone-in chicken breast and thighs…choose what you like! To keep it healthy, skin the chicken!
1/2 cup cola I use Pepsi Throw-Back that has real sugar
1/3 cup ketchup Again, I use one with real sugar
1/4 cup firmly packed light brown sugar
2 tablespoons apple cider vinegar
2 tablespoons bourbon Please determine if this is GF…information on alcohol has changed over the years. BBQ should be fine without it.
1 lemon, sliced
Whisk together first 4 ingredients. Sprinkle over chicken. Coat 6 qt. slow cooker with cooking spray and carefully place chicken on bottom.
Mix cola and next 4 ingredients. Slowly pour between chicken pieces without washing off spices. Place lemon slices on top of chicken.
Cook on high for 5 hours or low for 6 1/2 to 7 1/2 hours. Know your slow cooker. Mine cooks much faster. Check temperature to make sure it is thoroughly cooked.
Discard lemon and arrange chicken on a plate. Cover with pan juices.
Serve with coleslaw or green salad. Add some easy Ore Ida tater tots that are marked GF.
