A Healthy Snack – Roasted Chickpeas

Roasted Chickpeas

1 can of chickpeas

cooking spray

spice blend

For a spice blend I like Penzeys Sandwich Sprinkle (see their website) or a Mrs. Dash blend (easy to find at the grocery store).   Sandwich Sprinkle has salt, garlic, pepper, oregano, rosemary and thyme if you want to make your own.  Think pizza spices.

Preheat oven to 325 degrees

Rinse, drain, and dry chickpeas with a paper towel.  Arrange them on a rimmed baking sheet  ( I like to line it with release foil) and spray with cooking spray.  Sprinkle spice blend on them.  Bake for about 50 minutes just until they start to crisp.  Serve warm or cold.  Store for 5 days in an airtight container.

I serve these as a snack, appetizer or with a meal.  For my family, I usually make 2 cans.
