Chili Parmesan Chicken
preheat to 375 degrees
2 Tablespoons of grated Parmesan cheese
I use more
2 teaspoons chili powder
adjust to taste
4 boneless chicken breasts
This is easy to adjust to any amount of chicken
Pound the chicken breast to equal thickness. I described this in the first chicken recipe. Mix the cheese and chili powder on a plate. Dredge chicken to coat. Bake at 375 degrees for 30 minutes or until done. Serve with rice noodles and roasted vegetables such as zucchini and squash.
I like to make an extra plain breast in a separate baking dish for chicken salad. Have it the next day or skip a day. Use GF bread or buns for a sandwich, serve on crackers or on a bed of lettuce. I use Hellmann’s Mayonnaise and Blue Diamond Nut-Thins crackers, both happen to be “real” GF food!
